Plov is a very popular dish in Uzbekistan that has gained popularity all over the former Soviet Republics and Russia. Think of it as a rich, hearty rice casserole with onions, carrots, meat and a whole head of garlic. Oh yes, least we forget, this plov recipe is cooked in a sizeable amount of oil, here we use olive oil because it’s healthy, but do feel free to experiment… We’ve heard lamb fat ain’t bad either (taste-wise).
