Before anything, we’d like to clarify a few things. We are NOT professional chefs. Just your regular russo-canadian couple, really. We are both rather busy in our everyday lives and can’t really afford to spend 10 hours a day in the kitchen. But at the same time, we are very passionate about eating well!
This book has two goals:
First of all, we would like you to join us in our journey to Russia via its recipes and culture. Please, don’t get us wrong – the recipes that you will find here are not ONLY Russian. It would be far-fetched (some would even say imperialistic) on our part to pretend everything we cover comes from Russia. No. These are recipes from tens of countries and hundreds of cultures, each of them an integral part of Russian cuisine. Because unbeknownst to some, Russia really is a multicultural country. Hundreds of different ethnicities live there, speaking their native language on a daily basis and living according to their culture. Russians, Ukrainians, Armenians, Georgians, Abkhaz, Azeri, Greek, Uzbeks, etc, each of these nationalities has influenced Russian culture, lifestyle and cuisine in a million of different ways. And they still are influencing it… And who says culture, also says cuisine, cooking, food and drink! What better way indeed to discover a culture than through it’s culinary traditions.
Second, we will be publishing mostly easy recipes that you can cook in your everyday life. No need to quit your day job here, or to sleep in the kitchen. Well, to be honest a couple of these recipes might require a few hours of your time, but we promise that this is an exception rather than the rule. We are both highly sceptical of any recipe that sends you on an impossible errand to buy 20 ingredients you’ve never heard of before (and neither have the clerks at you local grocery), and then ask you to spend an eternity in the kitchen. We are not all professional chefs. We study, work, travel, have different hobbies. In other words, we have lives outside the kitchen.
The main reason we decided to publish a book of Russian recipes is that we couldn’t find any in Canada. Sure, there are some blogs here and there with a few recipes, but nothing substantial and definitely nothing in our local bookstores. All those “Cuisine from all over the World”sections seem to forget about Russia. Quite strange considering what Russia has to offer to the discriminate palate. That’s what we’re going to prouve to you shortly.
